Ingredients
a small butternut or half if large - peeled and diced
1tablespoonoil
1/3cupwhite cabbage
3/4cupred lentils
1/3cupparsley
1teaspoonthyme
1teaspoonsalt
1/4teaspoonblack pepper
pinch of cayenne (optional)
5cupswater
4bay leaves
Directions
Heat a heavy bottom pan
Add oil, sauté cabbage, washed lentils, diced butternut, salt, thyme, black pepper, water
Cover pan and cook for 30 minutes, stirring every 10 mins
Cook until butternut squash is soft to touch
Add parsley (reserve some for garnish) and remaining ingredients
Place all the ingredients in a bowl and blend with a hand blender or pass through a sieve
