Ingredients
Boiled potatoes (diced into cubes)
Tomatoes (diced into cubes)
Ground coriander
Turmeric powder
Cumin powder
Garam masala
Fresh ginger (chopped)
Fresh coriander leaves (chopped)
Asafoetida
Salt
3-4tablespoonoil (or butter)
1cuphot water
Directions
Heat the oil in a sauce pan and add the spices (asafoetida, cumin, turmeric, ginger and salt) and diced tomatoes (tip: you can replace tomatoes with cooked green peas or paneer or canned sweet corn). Sauté for few minutes.
Add the boiled potatoes and stir the mixture. Close the pan with a lid and let it cook for few minutes
Pour 1 cup of water and stir the mixture.
Add some coriander leaves. Leave the pan on low heat for 5 minutes by closing the sauce pan.
When the sabji is ready season it with some garam masala.
