Flavor of coconut with a fresh hint of lime topped by a passion fruit glaze. My most divine creation yet. Folks who have eaten this cake commented that it was better than chocolate cake!

Ingredients
½cupdried coconut toasted lightly
1 ½cupall-purpose flour
1lime zest and juice
½teaspoonbaking soda
1teaspoonbaking powder
¼teaspoonsalt
1/3cupcoconut oil
1cupcoconut sugar (you can use regular or raw sugar)
1cupcoconut milk
Directions
In a bowl add the coconut oil and the sugar and mix.
Add 1 cup coconut milk, the lime zest and mix.
Add the lime juice into it (should be about 1-2 tbsp).
Sieve all the dry ingredients into this wet mixture (flour, soda, baking powder, salt).
Mix well until there are no lumps, mix in the dried coconut.
Take an 8 X 8 inch baking pan, lightly oil the pan and line with parchment paper.
Preheat the oven to 350F/180C.
Empty the cake mixture into the pan and shake the pan until the mixture is evenly distributed.
Bake at 350F for about 35-40 minutes.
Check the cake is cooked by inserting a toothpick into the middle, this should come out clean.
